Homemade Chocolate

 Homemade Chocolate

  • 1 cup cocoa butter
  • ½ cup virgin coconut oil
  • ½ tsp vanilla essence
  • ¼ cup maple syrup

  • 1½ cup cacao or cocoa powder (unsweetened)
  • 1 tsp cinnamon
  • ¼ tsp salt

Fillings: Your choice of roasted almonds, roasted walnuts, roasted coconut, chia seeds, dried blueberries, pepitas, sesame seeds, etc.  Our four year old chose: dried blueberries, sultanas, pepitas, chia seeds, marshmallows, roasted coconut.

Wet mix…

  1. Place hot water in pot; heat up
  2. Sit bowl atop of pot; ensure no water gets into bowl
  3. Place in cocoa butter, coconut oil, vanilla essence
  4. Allow to completely melt
  5. Allow to cool to 35 degrees or cooler, but still in liquid form (place in fridge, but don’t forget it!)

In the meantime…

  1. Mix all dry ingredients together in a separate bowl; mix well and set aside (you may have to sift the cacao /cocoa)
  2. Add your fillings to another separate bowl; mix well and set aside
  3. Pour maple syrup into cooled wet mix; stir well to try to blend in the maple syrup as much as possible
  4. Add dry ingredients; mix slowly as it poofs (!) in the air!
  5. When all chocolatey and yummy, add fillings
  6. Place into moulds, chill, then cut, then try not to eat all at once

Food Quality Tip

  • Permitting the fats (wet mix) to cool to 36 degrees (or cooler) allows the micro nutrients such as magnesium in the cacao powder to survive
