Lemon Shortbread, Gluten Free

Ingredients

Wet:

  • ½ cup butter
  • Rind of 1 lemon

 

Dry:  

  • 2 cups almond meal
  • Healthy pinch of salt
  • 2 teaspoon stevia

 

Method

  1. Prepare oven to 160°C (320°F)
  2. Prepare an oven tray with baking paper
  3. Melt butter
  4. Add all ingredients together in a mixing bowl
  5. Using your fingers, mix all until well combined. Mixture will be slightly wet and gooey
  6. Divide mixture to approximately 8 individuals, flattening each one when placing onto the oven tray
  7. Bake until golden around the edges, about 20 minutes
  8. Once removed from the oven, allow to harden for about 10 minutes before transferring to a cooling tray
  9. Try not eating all at once

 

 

Food Quality Tip

  • Nut flours burn quicker, hence why the oven temperature is lowered to 160°C from the normal 180°C
