Stock rotation should be controlled throughout dry, chilled, and frozen storage for raw materials, rework, work in progress and finished product.

Purpose
The purpose of the Stock Rotation policy is to:
- Check stock regularly to ensure FIFO is adhered to
- Ensure there is no expired stock
- Ensure all stock is appropriately sealed and traceable
- Ensure all staff members are aware of Stock Rotation
Raw Materials (sealed)
- Use the FIFO system: First In First Out
- If unsure, follow the label that has a Use-By date, Best-Before date, or date received/packed
- NEVER place fresher stock in front of older stock
- All incoming raw material is stored in a way which ensures that stock is properly rotated (as per receival and storage procedures)
Raw Materials (opened)
- Use the FIFO system: First In First Out
- If item requires decanting, ensure traceability is attached: Use-By date or Best-Before date, date opened and by whom
- If item requires decanting, NEVER place fresher stock atop of older stock
- Always completely finish decanted stock, then wash and sanitise container, allow to completely dry before refilling with new stock
Work in Progress and Rework
- Use the FIFO system: First In First Out
- Ensure traceability is attached: Use-By date or Best-Before date, date made, and by whom
- You may also require a “when to use product by” date
Finished Product
- Use the FEFO system: First Expiry First Out
- Finished product may be identifiable through batch code using: Julian code, Use-By date code, Best-Before date code, or a more sophisticated manufacturing code
- Ensure your consumers are able to identify the expiration of your product
